| Expediter | A person responsible for collecting the food items belonging to an order from the different stations in the kitchen (pantry, grill, salad station, etc.). The expediter places all the items associated with a particular order on a try, and is responsible for Quality Assurance of those items. |
| Expediter Device | than the server who took the order, can assemble and/or deliver the order. An expediter printer may be used in one or both of the following situations: The restaurant has an employee, such as a kitchen manager, who plates the food and prepares it for delivery after various chefs make the component parts. After collecting all of the food (steaks from the grill chef, salads from the salad chef, etc.) this expediter hands the food off to a waiter or runner for delivery to the table. This expediter's purpose in life is to see that the order goes out correct and complete. To do this, he or she needs to refer constantly to an expediter device (printer or monitor).The restaurant has an employee called a runner who delivers food to the table. This is not the same person who took the order from the customer. This expediter collects the food in the kitchen, checks to see that the order is correct and complete, and then delivers it to the correct seats at the correct table. To know where it goes, the runner needs a printout from the expediter printer. The purpose of having a runner is to allow the server to focus on customer service (i.e., selling). |
